The Cognac district covers around 75000 hectares of vines divided into six areas (Grande Champagne, Petite Champagne, Bons Bois, Fins Bois, Borderies and Bois Ordinaires) and planted with a majority of vines of the Ugni Blanc variety. The secondary varieties are Folle Blanche and Colombard.

The wines are usually at a low alcoholic degree and have a high rate of acidity.
The distillation (November to March each year) is double in pot stills of 25 hectoliters in volume.

The Maison Prunier does not have vineyards and buys from the distillers and vine growers each year to ensure the ageing in oak casks in their own cellars.

At this stage, the cellar master plays fully his role by the selection of the blends and the choices of ageing conditions.
During the long period which follows there are continually, renewed choices and checkings to be sure to obtain the best product for bottling which can be carried out at any time after 2 years or 50 years later.
